Title: Nuts
Post by: jakobrhodes on December 01, 2003, 09:46:00 PM
Has anyone tried smoking nuts? I've tried almonds with good results and am curious if anyone has tried soaking them in a salted brine or if that's possible.

[8D] I have also smoked almond and I do brine them in kosher salt for up to 24 hrs. I drain them and then lightly coat them in olive oil and then season to my taste. This last time I did a New Mexico red chile and parmesan cheese combo. It came out great and they make a great gift. Hope this helps
PS I used 2 cups of salt.
