I am currently converting an old commercial freezer into a smoker, and I am looking for suggestions for a means to effectively generate heat inside the smoker oven to heat up to 250 F.

Hi, I am sure you could you an old ring from a cooker and also rig up a temperture gauge to work the temperture as well. Just an idea, After buying the bradley smoker i wish that i had just bought the smoke Generator as most of the smoking i want to do is cold smoking ie no more than 15c/59F but have trouble getting it down normally operates at 100F, which is no good for cold smoking
