Title: Smoking Prime Rib (Standing Beef Rib Roast)?
Post by: mcegoon on December 17, 2007, 10:36:22 AM
Hey All! ;D

After smoking my first brisket (turned out pretty good), I'm thinking about doing some sort of smoke on this prime rib. I notice nothing coming up in the searches for prime rib though. Anyone tried this? ???

I did one for Thanksgiving.  Put a rub on it the morning before Thanksgiving.  That evening I cold smoked it using hickory for 3 hours, wrapped it in saran and placed in the frig overnight.  Thanksgiving day I cooked it on a gas grill.  Turned out quite well.

By the way, the prime rib turned out GREAT  ;D I wish I took a picture. I wound up using the FTC technique after putting them in a 400deg oven for awhile. The only slight problem was that I couldn't figure out how to stop those ribs from cooking while still staying warm. They literally went from 125 up to nearly 180 all in the cooler with no heat! Still turned out great for my taste. Only slightly rare.
