Just wanted to say thanks to everyone for your help. My brisket was a huge success and everyone really loved it. The ribs were also very tasty and just fell of the bone :) The brisket was so moist, not dry at all. I smoked the brisket for 4 hrs and then left it in the dbs for 18 hrs at 210 degrees for a total of 22 hrs. The ribs were smoked for 1hr 40min and then cooked for another 6 in aluminum foil in the smoker.

Wow! Brisket looks awesome. How did you keep it so moist? Did you mop at all while it was cooking for the 22 hours? What kind of wood did you use? Thanks

I think I just got lucky that it was so moist after all those hours. I didn't use a mop on it at all. I think part of it was that I got a good cut of meat from the butcher not one from the supermarket. I used Hickory to smoke it, yummy :)

They are every where!!! Nothing is safe when it comes out of the smoker. :D ;D Good job!!!
