well gang papa is taking on a whole new area, i'm making sausage look out! By the way look at the picture, told you guys i was gettin her and this grinder is HUGE! The size of the motor looks like something found on a airbus!I think i made the right choice, but i'm sure I'll have a ton of questions and I'm hoping that some of you experienced sausage makers can lend me a few tips because i have a few wild flavors brewing in the noggin thanx!!!!!(http://i247.photobucket.com/albums/gg132/smokinhotpapa/0114081949.jpg)

I'm in the same boat except mine is coming by dog sled! (Canada Post)

My 11 lb stuffer got back ordered as well so I definitely need you to do all the trial & error for me!  ;)

sure mr walleye i would love to and i'm sure you wont be dissapointed! Going to grind this weekend and stuff sausage and drink birthday hops so once i get rolling i will share all of my experience's with you guys and recipes!!!

Nice grinder you'll have fun with it. Every time I butcher a pig or deer I try different sausages. right now theres a potato sausage swiming in beer on the stove then to the grill. You might want to get the book Great Sausage Recipes And Meat Curing by Rytek Kutas. It's a great book on sausages. alot of fresh and smoked sausage recipes are in it.

Good choice. I have the Cabela's grinder as well and am very pleased with it. I used a hand crank 5# stuffer from the Sausage Maker to stuff the casings; you should consider a dedicated stuffer.

With that grinder, if you're doing less than 5 pounds, you'll spend more time in setup and clean-up than you will grinding.  :o

thanks all, I sure am excited myself and cant wait to get rollin, I am going to try this recipe i've been thinking about even before the wife got me the bds for xmas, I am calling it "hawaiian jerk pineapple" and i'm sure it's going to take alot of tweaking to get it right but as you can see thats the kind of thinking i got going on upstairs, I'm going for the exotic, stuff people would never even think about, when i figure it out i'll pass it along to all! thanx

chuckles. but man thats a nice unit. I have a ol hand crank just for venison grinds. maybe some day Ill invest and start doing bigger projects

You might want to pick up a copy of "Hot Links and Country Flavors" by Bruce Aidells and Denis Kelly. It all about sausages in American regional cooking. It will inspire your exotic thinking.

Good grief Papa!  Does that thing come with jumper cables?  You may have to have one of those starters they use to start the Indy cars! ;D  Tell us about your first adventure.  I am about to bust a gut to start making sausages, even bought a small grinder and stuffer at Gander Mountain but haven't ventured down the path yet.

Don't worry, I started with a KitchenAid attachment to grind and stuff sausages. You will have fun! Almost like beer: a few key ingredients combined to have many different outcomes.

Arcs...  I have to laugh...  We were thinking about going with the KitchenAide attachment, as well..  Santa brought me a 600 series Kitchenaid for Christmas and I thought it would have worked out just perfectly...  However, somehow we ended up with this big ol' grinder that you could mount for take off!  LOL  It is huge.  I don't exactly know what I was thinking, but I thought I could just add this to the counter  with the other appliances...   That baby barely fits on the counter!  LOL 

SmokinHotPapa and I are going to play around with a few ideas this weekend...  It should be a good time.  I think I might get online and order a few books.  Some of those "sausage" books are really cheap on Amazon!  We will keep your posted, I'm sure!!   ;)

Do you guys think that the grinder i bought is to much trouble for stuffing sausage, its a 1hp from cabelas an seems like an overkill,does anyone else stuff with there commerical grinder, any input would be much appreciated thanx!

Not to divert the thread but I have been looking for a couple of books as well. Is the "Charcuterie: The Craft of Salting, Smoking, and Curing" by Michael Ruhlman, Brian Polcyn up there with the ones Arcs mentioned? Or is it not worth the money?

Hey Buck, speaking for myself, I like the Charcuterie book.  I have made a few things out of it and they have all been pretty dang good.  There is some stuff I never see myself making, but that's true of all my recipe books.

I have to agree with Hab on this book. It has been very helpful for me.

I have a grinder like that as we cut-up our own beef. On the over-kill issue works ok for sausage, but snack sticks will have you pulling your hair-out, just pushing too much through a small hole.

I have that book as well, but since it is not focused on sausages, I did not include it in the starter list.

Hey Papa,
I fear we may have been busting you a little too much about your grinder.  Two reasons, 1. you're fairly new on the forum, and
2. grinder/stuffer envy.  You should try that bad boy out, have fun learning, don't worry if it doesn't work out like you want the first time and then let us know how much fun you're having.  I have had a much smaller grinder/stuffer that I bought and haven't had the guts to get the boy out since I bought it so what can I say?

Knock yourself out and let us hear from you!  Mama, will that grinder fit in an Escalade?

Gotta admit...We use the KitchenAid...works fine for us. Need another kitchen doo dad like a hole in the head! But...that is one fine lookin grinder...stuffer...:)

it just occured to me that we no longer need, the blender ,food processer, dicer, smoothie maker, yard chipper,leaf chopper, and the snake for the drain, and i'm going to figure out how to make a go cart for the kids with that puppy!

All I do is stick the end of the casing over the faucet and rinse the inside out real good then soak them in room temp water for 30 minutes or so. Make sure they stay nice and wet when your sliding them over the stuffing horn. Careful if your twisting them into links because they burst easily.

thanx iceman,picked up all my seasonings today, tomarrow the big grind and stuff party, so i stocked up on lots of cold beverages just in case of disaster, that way i can be alot more happy to make 30# of fresh ground sausage instead of linked "oh what am i getting myself into"!!!!!!

Mr. Walleye...  Glad to see the Canadian post stepped up to the plate.  I bet you were like a kid in the candy store when that box came to the door!  Whatcha gonna make first?  You know you wanna get out there and grinding some thing...  I am going to stop at the store on the way home and get some chicken so I can have some ground chicken around the house, in place of beef...  Change of pace.

Papa....  Whatcha doin home already while I am at the office slaving my little fingers to the bone?  he-he (as I look on ebay for some hot cookbooks!)  :P

I hadn't decided yet, partly because I didn't think it would arrive for another week. Man... now I made plans to head out ice fishing this weekend and on top of that I passed up a good deal on some butts the other day! Sheehhh!

Your right though.... Something has got to be ground up now for sure!  ::)
