Here's a link to the snack I brought into work today. Tried to post a pic from work but most host sites are blocked with the firewall.

Hot smoked "Kippered".
Brined overnight, Rinsed and air dried with a fan at 65F for two hours, Smoked at 115F with apple for two hours, Raised temp to 130 for two hours no smoke, Raised temp to 150F for one hour no smoke, Raised temp to 165F for final hour no smoke.

Okay...It's OFFICIAL now.....You're not allowed to call it "work" anymore!!  NOT when everyone gets to eat like that!   ;) :D  Sure looks a LOT more appetizing after you've prepared it than they do when we first pull those pale/pasty looking slimy slabs outta the Copper River!

P.S.
Back down in America for awhile...will likely miss the June Chitina trip for my 40-60 CRRs  :'(

I'll save you some Kummok. I plan on taking time off this summer to stock up on a bit of everything.

Fishing....The BEST use of time off! Eating Fish....what fills the in-between time! ;) ;D
