Just wanted to make sure I have covered your need for cheese.  I have the following for smoking for you to enjoy at the Crawfish boil.

Havarti
Vintage Dubliner
Le Gruyere
Gruyere Swiss
Jarlsberg C&W
Don Olivio
Mo Danish Fontina
Reserve Dofino Gouda
Vintage Gouda
Millefoglie Al Marzemio
Comte
Horseradish Cheddar

Hopefully will be getting these and in the smoker tomorrow night then vacpac until the boil.
Also picked up some peppered Pistachios for smoking as well.  Now if I can just remember to pick up a large bag of garlic.

We will have the crawfish for dipping and might bring down some shrimp just in case.  Think we will have some slushies as well.  Bet there will accidently get some bourbon or tequilla spilled in as well.  :P

I am sure I could talk the better half into a vacation to Canada.  Only thing is I would want to hit the fishing and goose hunting seasons.   8)

The party is the annual LSU Alumni Crawfish Boil fund raiser.  I an not an alumni but I am a bug eater.   :o
I am sure there are tickets still available if anyone is interested.  Saturday May 24th is the date.  Bugs and all you can drink beer along with live cajun style music and a mardi gras atmosphere.  The group I hang out is reportedly only about 160 strong this year so you see we could add a few more tables (10 people per table with 50 lbs of bugs).  They bring the bugs from Louisianna in a refrigerated truck.  I think it was 14 tons last year.   :P :P

I've been waiting a whole year for this.

I just love them mud bugs with corns, onions, lemons and crabs  ;D good cajun zydeco tunes, cafe dumot, beignets and  fried catfish po'boy sammies. Cant forget the gater nuggets, andoule, tasso, dirty rice, gumbo.   mmmm  ok i stop now :o

(Don'tcha just love Moms!!) Anyhoo...I'll be back in the desert on Saturday and figure out what the hell I'm gonna bring..still gotta hook up with WCK and see if we can ride together...hard to do from the other side of the world (where the ocean is on the other side)!!

I wish I could make it but I'm thinkin' my schedule would be a little tight.... I leave the next morning (May 25) at 3:30 am for northern Manitoba for a week of fishin' with some friends, six of us in total.

Sounds like nothin' but fun & good eats though!

How do you know magical things didn't happen when they threw them to me?  I believe it is far better to give than to receive (well, there are a couple of things that doesn't apply to, but this is a family site so I'll leave it clean)  ;D

Boy oh boy this turned out to be a really cheesy thread.  :D ;D ;)
Still in the low temps here so I guess I better get after some cold smoked cheese while the getting is good. Got the satellite tv, icemaker, fridge, and hot water plumbed in to the smoke house / dog house so it is time to let the smoke begin. Hope I get in trouble alot this summer so I get sent to the dog house.  :D ;)

Can't pass up the opportunity to have a little more extra to add into other things.  I think a few of these will end up in some green olives after I pluck the pimento out.

Hopefully I won't end up with cheesy garlic paper.  Got up to around 100 deg today.  Cooled down a bit tonight, around 74 deg.  Under the pistacios the probe is reading 85 deg but under the cheese it is 71.  The load is top shelf, Cheese, 2nd down - Cheese, 3rd down is Garlic, 4th down is Pistacios, 5th and 6th shelf positions are open.

I did the apple.  I bought some smoked gouda that was smoked with apple and it was tasty.  Wanted to see how I compared.
I didn't get the amount of smoke on this as I wanted.  The puck advance stuck after 1 hour and I didn't notice it for 1 hour.  It was hot yesterday so I started real late (11 PM basically) getting the cheese put on the trays and the setup ready.  Didn't finish vacuum packing until 4AM.  Figured I'd cut 1 hour off what I wanted to do.  Hopefully it will be strong enough or I'll add some later.
The pistacios came out great.  Don't know about the cheese or garlic.

Today is the beef jerky and tomorrow is the Pork Butt (for Mrs Giz's coworker).

An hour may be plenty especially on the light cheese. I have been doing an hour and half and am happy with all of them.  Sounds like a good weekend.  I have 2 butts and a brisket this weekend.  I bought some cheese today (your fault) and will try to get it done and take to KS.   ;D

Amazing difference in a few miles...what maybe 20 at the most?  Anyway the Butts are done and the brisket is still hanging in thier... will try to do it tonight when it cools off.  It is like 90 here now... WOW running the AC  8)

110 degrees?? Where do you live? New Mexico, desert area of Cal.? It's not even summer yet how can you stand the heat? Man I thought it was bad around here when it gets to 90. I'm not a heat person, I'd rather it be 30 degrees out vs 90 degrees. Yea I know.... many people look at me like I'm nuts when I say thet but when you work on 2,000 degree plus furnaces its nice to get away from the heat.

Go PENS!!!!   ;D ;D err I mean the little black and white birds in the tux's.

Hey Pens...yeah I live about 20 miles east of Palm Springs...in "La Quinta" snappy handle huh? :) Anyway...I just walked outside and it was like walking into a blast furnace (which, from your post, you can relate to)!! It is god's country from November to early May...but now...NOT SO MUCH...man it's hot out...suppose to be 111 today...anything over 108 is just plain old every day hell!! But ya know...it's a dry heat...!! :) (And you thought I was kidding about the soup!!!)

Yeah, but so's an oven....and a smoker.  Add in wind and ya got a convection oven.

Story time:  Back in 2000, Labor Day weekend to be exact, I was on my way to Wichita to visit my sister, and bringing my Grandma with me.  My pickup's air conditioning didn't work, and we left just before noon on a day the temp got to 110 degrees.  Hot enough that the vents were blowing hot air, having the windows rolled down made it even worse.  Most miserable 6 hour drive I have ever been on.  Got to the hotel I was staying at (Grandma was staying with my sister), and splashed some water on my face...at this time I noticed that my glasses had actually burned into my face (not bad, just left a little indentation).

Pickup stayed parked until Monday when we left, but it had cooled enough (to about 90 or so) that it wasn't near as bad going home...made it with only 2 pitstops (think there were 6 or 7 on the way down).

I have lots of insulation, so 65 would be about right to do the swimsuit thing....not sure about actual swimming though (does the term "shrinkage" mean anything to ya'll? :D ).  40* I start lookin' for a coat, and I don't start complaining until it hits 0*.  At 80* I start to melt, as evidenced by the liquid that forms on my skin, don't know what else it could be. :D

Oh I now so want to move those are my kinds of temps..even here in west texas we get cold, which I love, but come spring summer fall...to dang hot.  Anybody need a brisket smoker up north??   ;D

Duck I was talking with my family in Palermo, Sicily and Cassaloto, Italy today and they told me to tell you under no circumstances does a male Italian giggle like a school girl  ;) We have a reputation to uphold  :D :D Then they proceeded to laugh their a$$ off and told me their is someone else who is as abnormal as I am  :o ::)

After talking with them I'm I firm believer the farther away my family is from me the more I love them  :D

Listen, when my grandmother was making her gravy and it was on the stove for 3 days brewing, the aroma alone was enough to make me giggle like a schoolgirl.

What I want to know is why you're talking to your family about me?  LQ didn't ask you to hire a couple of Zips to come over and take me out, did she?  If so, I'll bet it was the prune juice comment  :o

My cousin asked me what's new, so I told her abut your giggling like a school girl and molten lust comments. It went down hill from there; all she only told everyone was the giggling comment. LQ need prune juice, no not her (I did good huh LQ)  ;) ... and you tell me I'm flying too close to the sun  :D

Things are good until I tell them I'm still single. You know how Italian's are if your not married. All I hear is you need a wife (yah I do, I'll shoot myself for ya). But my favorite saying from them is "You should meet so and so's niece, she is just perfect (ok again I volunteer to shoot myself)

It's almost a mortal sin to be Italian and single (not from the male perspective, however  8)).  I swear I'm going to Italy before I die (it'd be a little hard to do after  :D).  I didn't marry an Italian myself......I did it for my kids.  This way, they can never become made members of Our Thing and their life expectancy rate goes way up  ;D.  I wish I did now though.  This one can't cook a lick.....but she does like to lick the cook  :o :D ;D

I can see that you're all happy now that you've got cheese, jerky and bugs......In the morning, I'll refer to you as Percolater.  And if you don't know why, ask your hubby.  I believe in his country of origin, they serve beans at breakfast.  Breakfast???????  Just what a guy needs.  Wake up with an empty stomach, pour some coffee down the gullet and give him beans.  Then have him walking around all day........now I know why it's misty over there quite a bit  ;D
