Title: Wild geese

Does any one have any suggestions for smoking a wild goose?

I never did get out to whack one this year, but if I had shot a Canada, I was going to brine it in "hi-mtn game bird and poultry brine".  I've used it on regular chickens and it is a very nice taste.

I'm with WHite on this.  Though I have never done goose, that would be my sugestion also.  If you breast them out with no skin, brine those honey's then wrap them in bacon.  Also, I am probably talking to a major goose slayer here but if this some of your first birds just make sure and clean any blood that might be in the meat, really clean, this will make a big differance.

Ducks:     1 prop and 1 bent prop shaft.
