Never made it FL but eatin them many times...they are awesome...meat to be made by those guys in LA who invented them...but...I'm not an expert on de-boning birds...if you are...SWEET...I'll order from you!!!  ;D Think if you smoked it...only the turkey would get the smoke...additionally...I think smoking all three birds would be overkill?

hummmm.. thinks .... I  think i  heard something  like that on modern marvels back in the  day  a king asked  to cook a  chicken stuffed in a duck ...stuffed  in a turkey.. stuffed in a  pug..  stuffed in a  cow.. then cooked... cant say  how  it  would turn out

Never had it, and thought that USDA did not permit the sale of uncooked Tur-Duc-Hen, but back in July when I was looking for information on this year's Hudson Valley"s Ribfest I came across an article of someone who order an uncooked one, and had smoked it at the ribfest back in '07. If I can find the article I'll post you a link.

I did a tur-chicken.

Shot a wild turkey and put a large roaster hen into it. Came out pretty good. Have to find the disk i have the pics on.

Didnt have a duck at the time.

Good luck with you surgery.

If you make the Tur-Duc-Hen let us know how it turns out, and if you were able to purchase an uncooked one or had to go through the deboning.

Where are you in FL, I have read it before but forget.  I live in Orlando, My sister lives in Sarasota and one of her favorite restaurants sells tur duc hen.  It is a restuarant/butcher shop and they sell them whole raw or cooked as a dinner portion, it was actually featured on Food Networks Diners, Drive ins and Dives for the tur duc hen.  I believe the name of the place is Alpine Steakhouse, I will have to double check that.  they are not cheap, I want to say a whole one is about $150

We are in Orlando often, with Disney seasonal passes and 4 kids.

Sorry just getting back to this post, I have probably seen you there!!  I have two young boys and we too have annual passes.  We are there on average every other weekend.  We live about 20 minutes away so if they get tires we just head home.  We figure people tracel from all over the world to go there we might as we take advantage of what is in our back yard.

I couldn't find them in my local Super Wal-Mart or Sam's. Saturday I was in Price Chopper, and they had a display for ordering Tur-Duc-Hen by Tony Chachere for $60.00. I forgot if it was 12 or 15 lbs. Mine should be in on the 22nd.

I have a couple of questions.  On the small (3 lbs) version, I plan to smoke for about 1:30 - 2:00 hours with hickory, then finish till the internal temp reaches 160-165.  I am not sure of the temp of the oven or if that is too much smoke.  Next I wonder what tips anyone would have for doing the full bird. 

Any help would be great!

I'm planning on cold smoking, for about the length of time you are thinking about, then finish in an oven. Since I have concerns that my smoker may not reach a cabinet temperature of more then 250°F, and that it will probably take some time to get to that temperature, I feel more comfortable finishing in the oven. My  concern is that the tur-duc-hen I purchase has a bread stuffing.

I was able to go back and change my order. I order one with shrimp and crab stuffing, they also had a pork sausage stuffing. Mine should be in on the 22nd, but now it looks like it will have to go into the freezer and used for New Years.

I sure will. I'm picking it up tomorrow. I was going to make it for Thanksgiving, but both my plans for Thanksgiving and Christmas has changed, so I can't go with what I originally planned.

It a good question and one that I had asked. As FL pointed out the ones that are shipped are frozen. I spoke with the person behind the counter, she said they come cryovac and can be frozen up to 3 months. But if they are cryovac, the freezer storage should be a lot longer.

I was in a hurry today, and running behind schedule. I didn't realize that they gave me the wrong style of Tur-Duc-Hen. When I got home I learned I got the pork and cornbread dressing. It's clearly labeled on the box, I don't know how I missed it; or how they messed up.

It not worth the extra trip to travel 25 miles to return it. This style also sounds good, so I'm looking forward until I can cook it; 15 lbs for $60.00

I would still call and fitch a bitch. They might give some sort of refund or other non-monetary compensation, for screwing up your order. Since there isn't enough time to order another one.

Habs...I have had that "version"...it is good....the sausage kinda stays in the background and gives the fowl they're due. I think you'll like it. I'm not a big cornbread fan...but it was quite tasty.

I would do that, but I've used that store for special orders in the past, and for a large chain store they try to go out of their way to please my odd requests. I should have read the box, it is clearly labeled. On the other hand that gives me an excuse to order another one for Christmas.

While I was checking out the clerk stated that the day before Thanksgiving, they usually will have a few left over because some people will not pick up their orders. The price will be reduce, and after Thanksgiving they are reduced more. I wish my nephew was still working at that store, I would have him put one aside for me.

Below is the link for Hebert's Speciality Meats near Lafayette, LA.  They claim to have invented the turducken.  I picked one when I was working down there a few weeks ago and I think it was $60 or $70.  Also got some other stuff including three deboned, stuffed chickens.

I have not looked at the web site close enough to be 100% sure, but I think they will ship.
