Title: Kummok's salmon

Smoked 15 lbs of atlantic salmon (farmed, but what else can I buy this time of year?) on Saturday night.
The outside temp was 5 degrees F. Usually it takes me 5-5.5 hours to smoke a batch in the BDS, but because of the cold it took me a good 8 hours for my fish to finish.

Never the less , the fish was perfect. I've tryed many other store bought brines but still say that Kummok's is the best.

I've got 8 racks smoking right now, sprinkled with some crushed juniper berry, cracked pepper and rosemary. BTW Mr Walleye, I ordered 8 jerky screens plus some other goodies from Y and P. Thanks for the advice on the screens.
