Title: Death by Smoked Salmon
Post by: Kummok on January 25, 2009, 01:07:27 PM
Had to come up with something QUICK for a potluck featuring all Alaskan Fin/Fur/Feathers. As you might guess, I chose fish. Had plenty of smoked Reds and Kings so decided to make a "fish stick", hooter-sized. Blended by hand, 16 oz of Philadelphia Cream Cheese, 4 Tbsp of Lipton Onion Soup mix with about 2.5 cups of Cuisinart shredded smoked Red/King (SSR/K). Formed into hooter and chilled in freezer for 10-15 min, then rolled in more shredded SSRK. The pic below is the result. The presentation included filling up the side pockets of the plate with bite sized pieces of SSRK and lightly sprinkling Wild Alaskan Silver Sage over the top (Sorry...it was consumed before I remembered to get an "as-presented" pic :-\ )

Opps....forgot to include that it was served along with multigrain rosemary crackers and celery sticks upon which it was intended to be spread....

Man, I bet that was good!  There is something about the marriage of cream cheese and smoked salmon!
