It starts with a smoked chicken.. ;D
I rubbed a hen with butter and seasoned with kosher salt and cracked black pepper... I wanted to keep the seasonings simple.
Smoked with a bit of hickory...

I combine the cooled chicken meat with about 1/2 cup of minced onion, jalapeno and some shredded queso campesino.

I blister and place the anaheims in a baggie to steam for easy peeling...( can be done on a grill)

The seeded and peeled chiles, stuffed with the smoked chicken, onion, jalapeno and cheese filling....

I dust them with flour and dip in a batter...then fry til golden...

The smoked chicken chile rellanos, cactus salad and anasazi beans with jalapeno bacon...

I forgot to add..
For the batter I whip 4 egg whites, add 4 beaten egg yolks and 4 TBS of flour.
I also serve a sauce on top of the rellanos...
I saute some minced onion and garlic in a bit of oil
add 2 cups of chicken broth
1 small can of tomato sauce
1 tsp of oregano
and salt and pepper to taste
It's a thin sauce, but adds a lot of flavor to the rellanos. :)

Cowgirl, that just looks great! My wife loves Chile Rellanos and I just bet she is going to want to give this a shot. We will probably adapt it for the Big Easy rather than frying. (I don't mind fried stuff but my Dr. prefers I leave it alone)

I bow down to you Cowgirl. I don't make rellenos much anymore unless I'm cooking for Dad. He loves them, but they just seem like too much work. Besides there is a little mexican resteraunt down the road a piece that has mamacita making them most everyday, and I can get my fill. Besides they are usually better than mine!

Those look incredible cowgirl! Have'nt had rellanos since the dogs got'em....this was years ago, the wife made a batch of beef and we went down to the barn to feed came back to the house there were two left on the platter (I think the dogs thought if we leave two for them they might not notice) needless to say the wife was p*ssed, I kinda thought it was funny (which of course helped) and those two dogs have since passed on (not because of the rellano incident)......Have'nt had rellanos since!...I've thought about making them myself, but I know someone would think I made them wrong! ;D
