I typically cold smoke for between 3 and 5 hours, normally using oak or apple. Oak seems to produce stronger flavoured bulbs. Make sure you keep them in a ziploc bag or a sealed box otherwise they stink the fridge out! I have kept mine for several weeks this way. Also see:

From the time I got the Bradley cold smoke setup, every cold smoke I do has some garlic bulbs to take advantage of unused space. I will vac seal in small packs of 4. Nice to give to friends to sample with their own recipes. I do not freeze them, as they seem to have a very long shelf life when sealed.

Thanks for the info, I have since smoked a rack of garlic bulbs for 5 hours in oak.
They don't seem to have changed color much, but do smell smoky but the actual cloves do not seem to have a taste differance?

That was part of the problem, I failed to see it either so my better half had to explain it in words of one syllable that she objected to garlic tasting grapes, strawberries, puddings etc etc. She had a long list!! ::) :-[

Perhaps try taking a little more of the loose outside covering off the bulbs or try smoking a bit longer, I have done up to 8 hours on garlic? I also found leaving the garlic in the fridge (in a bag!) for a few days helped the smokey flavour develop.  :)
