Title: A question for the Brits

As I recall (memory not perfect here) I've seen mention of "demerara sugar" in some recipes that seem to me have all come from you gents in the UK.

Maybe I'm out of it, but I've never heard of it. What is it?

Demerara claims to come from Mauritius in the Indian Ocean and Demerara in Guyana (where<b> I</b> suspect that it comes from.) It is a tightly packed brown sugar that has a very special taste in coffee and in BBQ. It does not apppear to be quite the same as the brown sugar in the plastic pack that I can buy in a US supermarket but I'm not sure that it makes a vast difference. in general, where it says "demerara" use "natural brown sugar"!

OK, is it the same as what I know of as "Turbinado sugar" which is raw, unprocessed sugarcane? I've been told this is the only sugar that will not burn, so you're fine to marinate & baste with it.

It is pretty chunky, like kosher salt & has an amber color to it. It claims to be the first pressing of the cane & contains the natural molasses.
