Smoked Pickled Eggs Cont

Well i'm doing some smoked pickled eggs today. First i made the pickleing brine and its cooling. Next i am steaming some eggs.

Steaming eggs makes for a less rubbery egg. And they peel better too.


Next they are going to get 20 mins of cold oak smoke  ;D


I will post when the brine cools and they are in the jar.

I used dried onions (didnt have any whole) and hot banana peppers.

nepas, Could the eggs be hot smoked or is that a bad idea?
I don't have a cold smoke option.

Just unplug the element and leave the smoke generator pluged in the wall. Crack the door some and open the vent full and some ice in the pan wouldnt hurt, like eggs on the 3rd space and the ice just below it. I used 1 puck. I dont think i would hot smoke the egg then pickle it.

Sorry to say I am not yet a Bradley owner.
I have the green Cabela's electric model.
I need the heat to get the smoke.  :(

Ahhh ok pete.

I worked at cabelas and know that smoker well. Maybe if you prop the lid open and just let the smoke hit the eggs this will eliminate some of the heat.

I'll give it a try. I've been pickling some quail eggs.

I have 200 or 300 more ready to go.

You can always buy a new pencil type soldering iron and put it into a small can of wood chips to make the smoke. Works for me.  :)

I steamed more eggs today and cold smoked em with mesquite. Just waiting for the pickling brine to cool and i will post the pics. I think i am going to do a couple dozen for the smokeout too  ;D

Nepas, I have never steamed eggs with the steamer like that. How long do you set the timer for to get them steamed?

The temps are like this.

For soft steamed eggs 15 mins. For hard steamed 20 mins.  The shells come off so much easier than boiling them.


Here are the eggs i did today. 40 mins with cold smoke mesquite, made my pickling solution and added som bananna peppers to the jar. Now in the frige for a few days. Once they start to absorb the solution they will sink to the bottom of the jar.

That sounds easy enough 20 min for hard boiled/steamed eggs pretty quick. then put them in cold water till cool like normal? I would assume so.
