I smoked some fish for my first smoke last weekend, I used a couple of my own brine recipes and kummoks temp times. I was quite happy with way it turned out but I noticed on one of the temp settings (can't remember what the rest were like) it would drop about 18* below and about 16* above the set temp, is this what I should expect out of my DBS ? is this acceptible for a good smoke ? would a PID tighten up this temp swing.

I have the BDS also and have noticed that the temp swing starts off big like that but as the product gets closer to the cabnet temp the temp swings get smaller. If you are going to do alot of fish or sausage you might want to get an PID. It does a great job at keeping the temps steady. If your only going to large things like butt turkey and brisket the temp swings dont hurt anything.
