swan jerky

last week a friend of mine visit  me bringing some goose.
after a few cups of coffee i walked with him to his car and than he asked me if i was
interested in 2 swans he shot in case of damage control ?? (right word??)
and so i take the swan and decide to make jerky of them.
recipe
2 ltr water
120 gram pokelfix (salt with herbs from Austria)
swan sliced thin 6 mm for 6 hours in water and pokelfix
dry for two hours
smoke at 77 oC for 3 hours
dry at 60 oC for 6 hours and the result was super

Sounds good but no cure?

You dont want to be doing the swan dive into the doctors office do ya.

you're right nu cure, i used the oak smoking bisquettes, they gave the jerky a very
nice taste of smoke combined with the herbs of the pokelfix give you an excellent
product.

I think Swans are a protected species in the United States, I never heard of anyone eatin a swan accepts Schwans Ice cream. In the UK all the swans are the property of the queen.
