My son,Willy, just got back from spearfishing in Baja where he shot some BIG Wahoo, any help on brining/smoking would be greatly appreciated

"smoking fish recipes" you will get lots of ideas.

It is not smoking but Wahoo makes killer ceviche.
Hmmm, light cold smoke say 20 to 40 minutes, then use in a recipe for ceviche.
Can you send me some of that Wahoo and I'll let you know how it turns out.

Ooooh Gizmo your just made me hungry. My nephew and I made a big batch of ceviche when he was living with us. I found a recipe for it on the interweb and we did a bunch of seafood. It was awesome. I think I will do some this weekend.

I added shrimp to my wahoo ceviche as well for a seafood ceviche. It was most excellent. The wahoo is a nice firm fish that stands up well for this dish.
