I'm guessing non of you have heated one end of a piece of aluminum and then grabbed the other end only to get burned. Aluminum is one of the fastest heat transferring materials just below gold and copper.  8)

;D ;D Never tried that myself - does not seem like a good idea. I do not think anyone is saying that it does not get hot above the foil. I believe the point that is being made is the foil creates a thin barrier and with the air flow a large portion of the heat (and smoke) will be mostly blocked and what is not blocked would be diverted around the meat and out the vent. It will still get pretty darn hot above the foil - just not as hot as below. Depending on a number of factors, there is a possibility of causing a fire or damaging the smoke generator. Too much smoke back-up into the generator due to inadequate circulation can destroy the generator and is enough to prevent me from totally covering a rack with foil.

It would be easy for you to test the temperature variance. Place thermometer probe below the foil, just above the foil, and towards the top of the cabinet.
