EVOO is Extra Virgin Olive Oil and is made from the first pressing of the olives.  It is usually quite flavorful.  OO is plain old Olive Oil, made from subsequent pressings, sometimes after heating.  I generally use EVOO for salads or in limited quantities in a marinade, but not generally for frying.  It has a pretty low smoke point.  I use OO for sauteing.  I use either canola oil or peanut oil for higher temp frying.  Hop this helps.
