Hey NePAs - nice looking brisket. where'd you get the food grade tub? i need one of them jobbies.

I have been using the disposable cutting boards, they are awesome for prepping and slicing then into the trash!



I got allot of cool goodies when i worked at Cabelas  ;D

Yes this is the briskit she gave me. I didnt get to do it today so i slathered more CT on it and its going to meet Mr Lil'Tex tomorrow.

Here is the 2nd coating of CT.

Our youngest daughter got hooked up with a scum bag guy, got with a baby and we had her move back home. Long boring story. Anyways she was down in NC visiting our daughter in law who is pregnant at Ft Bragg (she is Army SF also) so daughter picked me up some CT. Me and wife make 2 trips yearly down south.

So

Here is the CT coated briskit in the Lil'Tex this morning. Getting Alder smoke at 225* for about 9 hours.

I put on a rack so i can turn easy.

It is a work of art!  An abstract expressionist sculpture in beef  :D

Yeah, that really looks good.  I just finished off some pea soup with a smoked ham hock for dinner, but it can't nearly compete.
