OK...so Grandbabies came over (4&6) to see Bradley..... we are now singing the Smokin', smokin', smokin' Song...Thanks Caneyscud
It took me a bit longer assembling the Cordon Blue as I kept playing Strykers video to make sure I was doing it right.

Linda, 1/2 way thru you est. cooking time rotate your rack front to back (just turn it around).

The Bradley tends to be hotter along the back wall.

And if you want you can flip the chicken over at that time. Some do and some don't.

Thanks CRG, turned it as soon as I saw your post. probably 3/4 through. Smoker temp has been hanging around 200-217. Of course I'm sure that opening it to take a picture, add a rack of breast only, then just to peek didn't help with recovery.

I will get a couple of bricks like I have read about here next trip out. I am wondering also that if I am not using all 6 racks, would it be a good idea to add a couple of bricks up top as well (not blocking vent) to take up the extra dead space and help with heat retention?

I think your temp is fine. Really don't think you will have a temp problem there in cali.

Just make sure your IT is 165 on chicken. We don't want you sick.

Take a cple reading in different spots and make sure you don't go past the chicken meat for your temp (and into the hollow part).

Taking Cordon Blue samples to the whole family tonight at a family dinner at Grandma & Grandpa's. Bet Grandpa will be the next Bradley buyer!!!
