I just did a couple of butts and now FTC them How long can I keep them in the cooler? I will be having company later tonight and wonder if they would stay warm enough in cooler or would that be to long? I did foil and wrap in a heavy towel.Took butts off smoker when IT hit 195. They cooked for 15 hours at 220.

I have done them up to 7 hours in a "5 day" cooler.

6 hours shouldn't be a problem.

Oops, sorry FLBR.

If you preheat the cooler with hot water, it will help keep the meat hotter longer, but as the others have mentioned, I have had brisket in a cooler stay piping hot for 7 hours but I don't remember if it was the 5 day or 6 day cooler.

Another factor I overlooked is I almost always do at least 2 and usually 4 butts at a time.

They keep each other warm in FTC.

In other words, 4 butts in a cooler will stay warmer longer than 1 butt in a cooler.

I had a pan of water and 2 cups of apple juice in smoker all night along with the meat. Can I use this juice for dipping as long as I scim the fat off?

I would say yes.
