I saw that a few months back.. All I can say is, 'MAN, That looks delicious!'  I don't think I'd be able to make one of those.  Looks like a work of fine art just to put together the bacon weave.

It's not that hard.

I just laid the strips out (in one direction) on a sheet pan.

Add the strips for the other direction one at a time.

Once you get the hang of it, you can do it in about 10 minutes.

I would start with thick sliced bacon. It's less stretchy to work with.

I think I used Hickory and smoked it 2 hours to an IT of 155F

I would have thought that once the sausage was laid down on the weave it would stick and would be hard to roll up.  It doesn't?

Where there's smoke, there's food.

Not really.

You kinda smush it out to cover the bacon and then roll it from the bacon side.

I did 6 the other day.  One you kinda get the hang of the weave, they are quite fun to do - they come out so prittee!  One thing is kinda fun, put a brat or some kinda highly seasoned sausage into the middle.  The other thing, Sams has a 20 oz package of bacon crumbles - fill the middle of that bad boy with a handful of that to get the full bacon effect!!

All this talk is making me want to make some more fatties wrapped in the bacon weave and like Caney stated I'm going to put some Kielbasa in the middle.
