Ok, times up.   Butt hit 192 (good piggie!), but my buddy Chuck was stalled at 165. 


Anyway, they look pretty.




One low carb pork butt, coming up!




Into the dreaded crock pot for you, Chuck.  We'll see if you want to cooperate about 10PM tonight.




Butt is covered a pan, under about 6 towels, and into the cooler.  Threw a couple big items on top to keep the critters from breaking into it while we are at a Xmas party tonight.  (thanks again Deb for the BIG HONKIN' JUG-O-SYRUP!)

2 bigger ones are, littlest one isn't.  That'll happen when we are gone for Christmas vacation. (thank gawd)

For the record, Chuck had the 'low & slow' spurs put to him for exactly 30 hours...

21 in the Bradley, 9 in the crock pot.


I'm about to shove him in the fridge now to shut the process down.
