Electricshaman, I had the same problem today using two birds on the beer can stand (full Bud Light in each...)  Probably should have warmed the beers up more before starting.  For some reason, then the IT was at 170, the legs and thighs still were not done.  I too had to finish in the oven due to time crunch.  I was also using birds that were 6-lbs each.  Not sure if that was a problem either, but my smoker didn't seem to heat much over 210, even though the oven was set at 250.  More experimenting to do.....
