Pro Bowl Brisket

We just got home from the show, I put a ~8lb brisket in with four hours of Jim Beam.

Pro Bowl?  Oh yeah - that's the "all-star" game without any players from the top two teams.  Isn't there a "Duh" in there somewhere?

When I was offered the tickets I did not look at the date or the relationship to the Super Bowl.

The funniest part was the mascots.

At one point the Jaguars and eagles mascot come "streaking" onto the field, eagles in tighty whities and the Jagaur in a G-String.

The first thing I thought was "Tenpoint5 is in town and he didn't drop by to say hello!"

FLA - Didnt realize that you were so close.  I'm in sarasota.  Brisket looks good!!!  A few questions.  How long did you smoke/cook your brisket and at what temp?
And What is this Jim Beam????  Did you use Jim Beam wood chips or did you foil with a couple of shots from my good friend Mr. Beam?
Is it bad if my wife refers to the smoker as "The Mistress"?

We drove home from Orlando after the PGA Merchandise show, I put the brisket in about 2200 Saturday night. After working the show for 4 days and then driving home explains how I forgot to put in the V-Tray.

I set the PID to 205F

I took it out around 1300 on Sunday - FTC for about 1.5 hours on the way to the Stadium. So it was in 15 hours.

To be honest, I never took any temp measurements since it didn't matter. I was leaving when I needed to, brisket done or not!

I really couldn't taste the difference between the JB pucks and Oak.
