A dash of seasoned salt and some hot sauce sounds good to me.

Here's a problem I have been having lately:  Anytime i make chicken or pork with breading the breading never sticks to the meat.  I have tried letting the meat soak in milk for at least an hour.  I have tried different batters.  But no matter what I do the breading never sticks.  What gives?

Whip 3 to 4 eggs with buttermilk. Mix good add meat and let sit in the fridge for 3 to 4 hours.

Here is how i batter.

Buttermilk/egg/meat in the bowl-----------dry batter-----------hot oil

Left hand does the wet and into the dry, right hand does the dry to oil.

I havent used buttermilk but have I do put 1 egg in the milk mixture.  Maybe I need more eggs???  I have tried it so many different ways.  I have used beer, bread crumbs, corn meal.  I am usually pan frying the meat and everything looks good until I cut into it and it falls apart.  

Care to give out your dry batter recipe?

Just basic dry. I just eye everything.

bleached wheat flour
yellow corn meal (opt)
corn flour
salt
pepper
garlic powder
spices to your taste
and 1/2 t Accent (opt)
