It's been HOT here lately!  But that didn't stop me from doing some smoking!  i was at Crest (an Oklahoma owned grocery with great price and selection) and found these Hormel St. Louis style ribs.  Rubbed them down with some Salt Lick and threw them on the Traeger on smoke for about 7 hours. They didn't pull back from the bone much, but hey were very very good. I was a bit heavy handed with the rub.  My son had to wipe the rub off the top so he could eat them.  I thought they were delicous, but yes, they were spicy.  First time to use the Salt Lick on ribs.  I'll go a little easier with it next time.

Thanks!  No special knife other than it being sharp!
