Smoked Swordfish Using Alder Flavor Bisquettes

Here it is Smoked Swordfish

Smoked Swordfish using Alder wood source, smoked red potatoes, rice and a salad.

Not to bad...

At least 2 hours before you plan to smoke/bbq, combine the dry spices...

...with the wet solutions.

Here is the Swordfish that I purchased at Kroger's yesterday.

Place the swordfish in to a shallow, nonreactive pan or bag. I used one of my FoodSaver Quick Marinator.

Pour the Marinade over the steaks and cover.

Next drain the swordfish and apply a basic black rub - coarsely ground black pepper and kosher salt.

This is my "Smoke House" :0)

I used Alder flavor bisquettes/wood...

After spraying the racks I inserted to the second post from top.

I laid the Swordfish pieces on the rack that I sprayed before inserting into the smoker. Cook for 90 minutes.

Next I decided to make Red potatoes so I prepared them as if I was going heat them in the microwave.
Take a fork and poking them...

...then I cut them in halves.

Poured a little EVO and sprinkled with roasted garlic & herb seasoning.

The temperature has dropped but will come back up within a few minutes. I want to smoke between 180F to 200F.

I inserted the potatoes on the first rack.
I will later take the potatoes out and foil - then heat my grill and let these finish cooking.

One hour later I pulled the potatoes and foil...

...leaving a air space at the top for venting.

Next, I pulled the swordfish and laid on my grill, remember to rub a little oil on the grill grates before resting the fish.

Two minutes later I turned the steaks a 1/4 turn. This will leave great markings on the fish.

Two minutes late I flip and repeated.

Plated!!!

Can you smell what is cooking???

I can almost taste this...

Very nice!

I just order a fish combo package from Omaha Steaks... I get offers/deals from them all the time..  Mostly I am after their coolers.   ;)

The next shipment has some swordfish/halibut coming!    And I'm in the market for one of those foodsaver marinade containers.   You just pushed me over the edge on that one.

Yeah I do the same thing with them. My son is away at college so the cooler's come in handy. My neighbor gets his med's shipped to him and he also gives me the coolers and packaged dry ice. I store the ice in them freezer that out in my garage.

GREAT idea...  I need to talk to my vet about nabbing on some of their coolers they have meds shipped in. 

Of course they are small coolers, as it is just an "All Cat Clinic".  Everything is pint-sized.
