Smoked Turkey Breast with Honey-Maple Glaze

Smoked Turkey Breast with Honey-Maple Glaze with...

...Macaroni Salad

Smoked in my Bradley Stainless Steel Smoker.

WET RUB
1 Tablespoon Brown Spicy Mustard
1 Tablespoon Extra-Virgin Olive Oil

In bowl combine the wet rub ingredients and mix well

Wash the turkey breast, making sure to leave the netting, before applying "Wet Rub"...

Apply "Wet Rub"...

In a second bowl combine dry rub ingredients and mix well.

Sprinkle the "Dry Rub" ingredients over the turkey breast, coating it thoroughly.

Once the Smoker reaches 250f...

...place the turkey breast on a rack that was sprayed with a non-stick spray.

Place the rack on the second rest from top. Cook for 2 1/2 hours.

While it cooked I melted some butter in a small saucepan and stir in the maple syrup and honey. After the 2 1/2 hours I coated the turkey with this glaze and cooked for additional 20 minutes and coated again with the rest of the glaze. Cooked until the IT reached 163f.

Next I removed the turkey breast from the smoker.

Placed the turkey on my cutting board...

...let rest under a tented foil for 20 to 30 minutes before carving.

Next I took the kitchen shears and cut away the netting. I then slice the turkey on my slicer.

Decided to jump right in a make myself a turkey sandwich...

...with mayo

Looking Good!

Smoked Turkey Breast plated...

...and ready to eat.

Hmmmmmm...

Cool.  Let me know if it works out for you...   I can't see why not.

They come 2 to a case.  Roughly 20 pounds total - give or take.   This last bunch ran about $3.25/lb.
