Been awhile since I posted a cook. Have even fielded a couple questions on whether or not I still use my Bradley. Yes I still use it. Just most of my cooks I am testing something for the newsletter so I don't want to post them twice. On with the cook. One of the guys I work with dropped off 2 Butts that he wanted me to smoke. So today is the day. Here they are waiting for the Bradley to come up to temp. Just don't ask about the rubs, I'm testing!! I will add updates as the day progresses.

Butt number one

Butt number two

Be careful about calling yourself and EXPERT! An ex is a has-been, and a spurt is a drip under pressure!

Look good. What do they weigh? And if you need any help it is but a question away!  ;D

The 4 hours of Hickory smoke are just about done. So I thought you guys might be interested in a progress pic. The top butt is 136º and the bottom is 141º IT. They were rotated after the picture was taken. Normally I wrap in foil and add a splash of juice (Texas Crutch) but today I am just going to let them roll along all nekkid like.

Them butts sure have a nice color.

That must be "magic" rub you are using.

Are they done yet?

Tenpoint5

It was really weird the one butt stalled at 160º and the other stalled at the same time but it was only 151º. They are both climbing as we speak 185º and 171º should be having some pre-FTC pics here shortly
