What wood for Turkey?

I know asking this type of question is like asking who your favorite team is but here goes:
I am doing a turkey tomorrow. I have:
Plenty of apple, pecan, hickory, mesquite, Jim Beam pucks
about 2 hours of maple pucks

It is a 12 lb turkey - what wood and for how long - Recommendations?

I've done four hours of Hickory, Cherry and Maple are good too.

Four hours is a pretty smoky bird.

I am smoking a couple of Boneless Turkey Breasts as we speak.  I am using Maple.

STC would also tell you to use a more mild smoke.  No Mesquite and no Hickory.  I believe that STC likes Pecan for Turkey.
