New Member and first smoke

Thanks for the welcome everyone!
This is my first rodeo with an "electric" cooking method. I've been cooking pigs, shoulders, ribs, whole chickens, etc. on the charcoal cookers for years. Guess it's like anything else in this world, once you learn how to do it, you'll never forget it. I have charcoal cookers that I can tell you almost within a 5 minute window what time we'll need to add coals. This electric deal is kind of mind boggling to say the least.
I will be getting an internal thermometer ASAP. I've got the ribs wrapped in foil now and splashed them with a apple juice mix that I use on the charcoal grill. I'm going to let these lay in the foil for a little longer since I'm not comfortable with the initial temps I had going on earlier today. I got a sauce that I'll coat 'em with here in a little while and finish them off on the racks without the foil for another hour. After wrapping in foil I've had to bump the temp gauge back a notch as it was climbing to 240*......too hot IMHO.
