Thought I would do a rack of spares today. Been a while since I had any ribs.

Going into a preheated smoker set to 225 F. Going to get three hours of oak smoke. Simple rub of salt/pepper/garlic/chipotle.


After four hours, I put them into a foil pan with some liquid and covered with foil. For another 1-1/2 hours.


Then uncovered and sauced up and left in for another 1/2 to 1 hour. This is how they looked coming out.


And finally they are ready to cut and eat.  :)

I believe they're fire bricks but pens can correct me.  I use two regular building bricks wrapped in foil.

The OBS cannot retain heat (hot air) when the door is opened.  The bricks help to provide some mass to hold the heat.

Its an older camera, I really need a new one. That or learn when to change the setting for close up pics.  ;D
