This is one of my favorite smoked salmon recipes.


  1/3 cup Golden Sugar Cure packed
  1/3 cup soy sauce
  1/3 cup water
  1/4 cup vegetable oil

 mix all in bowl, mix well
 place fish zip lock bag and add mix squeeze out all air and put in refrigerator over night.
 remove fish and rinse thoroughly
 place fish on racks skin down and let set 30min.
 place in smoker add smoke for 30min. turn on heat (190-200) and continue smoke for 2hr or your own taste.
 cook till you have your desired I.T or fish flaks off the skin.
(note I like to check fish about 3hrs in and when you start to get the little white fatty oil on top I like to pat if with papper towel and sprinkle with a bit of brown sugar and let it melt in. It will soak up that oil.)
