Budweiser meets Jim Beam on a Texas Icon...

I will start at the finish and then update later.

Brisket Sammie's

5.8 lb Brisket from Kroger...

The night before I planned to smoke this Brisket...

I applied a coat of yellow mustard...

Next, apply a liberal amount of your favorite rub.

Sweet!!

Hey Pat, I don't think that is my Jaccard 45 Knife SS but a cheap one that my wife picked up at Kroger's a few months ago.

I placed the Brisket on the third rest from the top.

I couldn't place on the bottom rest since I use that for the Heat Diverter

I used a Budweiser Lager...

for making a mop sauce!

Basic Beer Mop:

12 oz beer (Don't use Lite beer, will make it bitter)
1/2 cup cider vinegar
1/2 cup water
1/4 cup vegetable oil
1/2 medium onion, chopped
2 garlic cloves, minced
1 tablespoon Worcestershire sauce
1 tablespoon of your favorite rub

In a saucepan mix together the mopping ingredients and warm over low heat!

I like a lot of smoke so I used about 5-6 hours...

After 3 hours in I begun to mop the Brisket with the Budweiser sauce about every hour or so...

After about 10 hours in...

I will cook this until the IT reaches 203f.

After the IT hit 203f I then FTC for 3 hours... couldn't wait any longer...

Gurrrrrr that was my belly, I was hungry!

Time to trim the fat...

Next I flipped it over and the beauty was ready for trimming.

The test...

Now that works - A+

Dang I almost forgot the Bourbon...

Bourbon BBQ Sauce:

Ingredients

   * 1/2 onion, minced
   * 4 cloves garlic, minced
   * 3/4 cup bourbon whiskey
   * 1/2 teaspoon ground black pepper
   * 1/2 tablespoon salt
   * 2 cups ketchup
   * 1/4 cup tomato paste
   * 1/3 cup cider vinegar
   * 2 tablespoons liquid smoke flavoring
   * 1/4 cup Worcestershire sauce
   * 1/2 cup packed brown sugar
   * 1/3 teaspoon hot pepper sauce, or to taste

Not bad!!

Oooohh God ......that looks so good. Nice work.
I like to walk threw life on the path of least resistance. But sometimes the path needs a good kick in the ass.

Looks excellent and it's always good to see a cook which didn't deplete the supply of real (drinkable) beer or whisky.

Nice.

And that heat deflector is a unique idea.  I like the concept and execution.
