Stalled brisket

Hi All,
I am new to the forum and the bradley smoker.
I am doing about a 6.5 b brisket and it has stalled around 165. I knew this happened with pork butt, is this normal with a brisket? It has been about 4 hours now at 165.

Yes! Normal and also is a good thing.

Your brisket is doing some magic.

Yep.....All is good.  I am doing some summer sausage and it stalled at 120 for 3 hours.  Thought it would never start climbing again.


Enough ain't enough and too much is just about right.

Yes, get used to the stall...

Butts, Briskets, Chuck Roasts, sticks, sausages, etc.


It's worth it in the end!   ;)
