Well I got a taste of the brisket and I am very pleased. I will definitely try this again. The meat was moist and I don't know if I would change anything the next time around, the wife and kids loved it

I pulled it a 185, skinny part was on the dry side but the thicker side was like butter. I believe one side is called the flat but I don't know which?
