Skinless Breakfast Sausage.

Was making some Sausage and Had ground a 11 lb Butt and had about 7lbs

of ground Pork left. I was Talking to a respected Forum Member and he said:

"I have always wanted to do this, but have never gotten around to it."

I should have know I was in Deep Do-Do. Here Mickey, you go First. ;D

First I did it in my new Weston and it came in with a bent arm. With no

pressure on the canister, it worked fine. When it got loaded up, it would not

crank in a complete revolution. I started off making them the width of my

hand, one at a time. Then I cut long strips of wax paper and got someone

to work the crank. That went Faster.

I had two of these trays.



I put them in the freezer for awhile and then divided them in 1/4's. It made

182 Breakfast links.



Later that nite I took a pkg out and made eggs, biscuits, gravy, and the sausage.

The wax paper was a pain to take off so next time I will use Butcher Paper.

All in All, it was Fun and the Sausage taste great! It was a LEM fresh sausage mix, regular.

Sure looks like a great way to make breakfast links. Good Idea Sonny I might have to try this.

Try laying them on plastic wrap next time you do the blast freeze.

Bummer bout your handle to your new stuffer, got a new one comin yet?

Any reason you couldn't put these on a frog mat and go ahead and smoke/cook them and then re-heat later; or would they just fall apart?

You can try this it works well with beef to.
Here is a recipe I have made for Venison Breakfast Sausage

7 pounds lean venison, 3 pounds pork fat,
one-third cup salt,
one half cup brown surgar,
1 1/2 tablespoons sage,
2 teaspoons pepper
and 2 teaspoons red pepper
directions:cut venison and fat into half-inch cubes mix ingredients and stir with meat
Run through sausage grinder.Make into half-inch patties and fry as need. makes 10# of sausage

I have cook it out on the grill and put on a hard roll they are real good.

real good with egg's

I have on my list of things to get is the 1 lb game bags.

I'll try that and stuff them into the bags to get something to resemble a patty.

I can cut better than I can patty make. ;D

Nice job on dem links.  Yep that wax paper is a pain.  My wife bought a cheap plastic patty maker at Bed Bath and Beyond for I think $2 and it works for makin sausage patties.  We use butcher paper between the patties and vac seal and they come apart pretty good.  I am going to have to try your method of making links.


Enough ain't enough and too much is just about right.
