wild turkey masterpiece

Well, again with help from the masters I have a success.
Here is a 10+ lb turkey my son got.
He gave it to me to do something with.
I used TMB's brine recipe...
1 gal water
1/2 C sea salt
1/3 C brown sugar
1/3 C white sugar
1 C cider vinegar
1tbls black pepper
1 tbls white pepper
1 C bourbon
mix all but the bourbon on the stove until mixed then cool, add turkey.
His recipe calls for 10 hrs in this I did 12.
then add the bourbon for another 8 hrs, I did 11.
My son had skinned the bird so I melted a little butter and mixed with a small amt of evoo and injected into breast in a few spots.

here it is after brine and before injection. in BDS at 225for 1 hr then 4hrs hickory. then until IT of 165*

10 hrs later and After 2 hrs FTC. Tender, juicy and just a hint of wild, which I like. Turned out very good, Thanks TMB.

Kind of reminds me of someone back when was I was 22! It's got to be good!   ;)

got a couple of frozen wild boys, I think i will try that on one of them . Sure looks good, Thanks
