Smoked 5 lbs of trout this past weekend using Boutch's brine and Hab's method. I used a nice brandy instead of cognac and it turned out fantastic. Thanks for the help!

I have also used brandy, and have had very good results. I've been watching for trout to be sold in my area. Since reading this tread I've been wanting to smoke some myself.
