Bacon Jamboree

10.5 made up some Bacon Jam and it looked soooo gooood I gad to try it but with a couple changes so I'm callin it Bacon Jamboree.  ;D

Did the same recipe but replaced the maple syrup with brown sugar, the coffee with black tea and used
2 lb of Farmland bacon.

Round 1, the bacon, onion and garlic ready to go.



Got the bacon browned and in the dripping station, now the onions N garlic.



Made a cup of tea.  ;D



Got every thing ready for round 2.



Got every thing put together and a boil goin.



In the crock pot on low overnight.



First thing in the morning dumped that in the blender.



Blended till it looked like this.



Dumped it all in a bowl to cool.



I tasted it many times wile cleaning out the blender and to me the flavor is balanced out pretty good.

The vinegar is in the back ground and the bacon is front stage with the sugar right behind and the onion filling in but could hardly taste the garlic.

I think its a success.

Question: How do you use it? wet rub? dressing?

Its a spread you would put on meat, like a nice juicy steak right before you take it off the grill.

I'm planning to slather some chicken breasts with it tomarrow.

Spreading it a couple of pieces of toast for a morning breakfast sounds good to me!  ;D
