Bradley smoked Pork Machacas

I made some smoked pork Machacas today  ;D
After eating these I never want ground beef tacos again  :D

I cubed a couple pounds of the butt and sprinkled some Mas Guapo over it then placed it on the second rack.
I rubbed down the butt with some John Henrys brisket rub and smoked it for three hours using special blend pucks.

2-3 pounds of Pork
2 tablespoons of Worcestershire sauce
Juice of two limes
2 cloves of garlic, minced
3 chipotle chile peppers in adobo minced
1 teaspoon of ground cumin
½ teaspoon of black pepper
1 large onion, diced
1 poblano pepper, diced (substitute a green pepper)
1 can of diced tomatoes
1 can of green chiles
1 teaspoon of hot pepper sauce
Salt and pepper to taste

I just added the ingredients in the pot and simmered for two hours.

I did it as a practice run for the up coming chef challenge. It's almost too easy to make and didnt take much's not very aesthetically pleasing either. As good as it was I think it's going to take more than this to even come close to beating some of you in the challenge  ;)

Looks great CH.  When I have time, I use a masa fried cup with a light layer of chopped green salad on the bottom and a sprinkle of the same on top with small slices of avocado.  It looks good too.  Now I am hungry again.  Good luck with your entry.
