Sausage Weekend

Spent the weekend making sausage.
Yesterday I made lamb sausage.
Today I made Kielbasa using LEMs mix. But I thought I would spice it up a bit and put some wine instead of water, added cure #1 so that I could smoke it. I did screw up and forgot to put the water tray in the smoker.  I went to check on it and noticed it wasn't there. Luckily only 2 pucks had dropped so I quickly put the pan in.
Here are the Kielbasa in the smoker. Currently at 122*IT.



Also made some Chorizo. Used Tytek's recipe but added some added spices - chile powder, red pepper.

Then I made some Italian Sausage. Added extra red pepper to try to make it spicier than last time. Here are all the sausages ready to go into the fridge and then vac seal.
Lamb in the round bowl, Italian in the white tray, and chorizo in the red tray in the back.



Still have another butt and some GB to do something with next weekend. I think I am addicted.

yes the hooks worked well. Just took the kielbasa out of the smoker and they are now in the fridge.  Long day

Looks like some good sausages to me. Let us know how the flavor turned out when you have a chance.

The others you gave me made it back home still frozen so I just put them in the freezer for now. I'll let you know when I get to taste them!  ;D

Sausages look great and I've been wondering how you attached those hooks.  Now I know. :P

Ok, I'll try:

The first time we met it was in a church parking lot at a BBQ comp. The next three times it was to get some of the CRG bread starter and to meet NePaS (with TMB) and the last time it was to swap some butt for some sausage.  I hope it's more clear now!  :D
