Maple Canadian Bacon

I saw a beautiful pork loin in Costco, $2.09/#, and decided to do some bacon.  I used MallardWhacker's recipe with Bradley's Maple Cure, did the cure the full 21 days.  I increased the rinse time to 3hr with a change of cold water each hr.  The results were wonderful.    After the smoke and IT of 150*.     
Into the refrig. for 2 days, now sliced and ready. 
This is the beginning of the celebration of my Wife and me Anniversary of 38 yrs together. 


It was the best bacon I have ever had, and the beginning of a beautiful day.
