Carolina sauce

Just wondering if anyone had a recipe for a good Carolina mustard based sauce they would be willing to share.I'm in Ohio and you can't find that kind of sauce around here to save your life.

Not sure where I got this, but it is simple and quite tasty.

MUSTARD BARBECUE SAUCE, South Carolina
Makes about 2 cups.
3/4 cup prepared mustard
3/4 cup red wine vinegar
1/4 cup sugar
2 tablespoons butter, melted
1-1/2 teaspoons Worcestershire sauce
1-1/2 teaspoons black pepper
1/2 teaspoon salt
1/2 teaspoon red pepper sauce


Cooking Directions
In a bowl, stir together all ingredients.

Brush on during or at the end of grilling.

Also serve at the table.

Refrigerate leftover sauce; will keep refrigerated for 2 weeks.



Habanero Smoker

SS that looks like a real good recipe.

This may not fit the typical Carolina mustard, red sauce or vinegar sauce, but a nice combination of all three. The recipe actually comes from the back of Lay's Tangy Carolina BBQ chips, and it is surprisingly good. If you like your sauce thinner, don't reduce as much.

Tangy Carolina BBQ Sauce
Ingredients:
1 cup cider vinegar
1 cup ketchup
1/3 cup spicy brown mustard
½ cup packed brown sugar
½ cup chopped white onions
2 tbsp butter
Dash of Worcestershire sauce
¼ teaspoon chili powder
Pinch of cayenne pepper
Salt to taste
Black pepper to taste

Instructions:
Place all the ingredients in a small saucepan and bring the mixture to a boil over high heat. Allow sauce to cook at a rolling boil, stirring occasionally, for 3-4 minutes until the sauce is reduced by 1/3.
Remove the sauce from the stove and season with salt and pepper.

Refrigerate until ready to use.

I have to agree with Habanero, the recipe on the bag is a good one.  I make sure that I have this one on hand for ribs, as it usually is a general crowd favorite.  Definately worth a try in my opinion (if thats really worth anything!)

Here is another.  I haven't had a chance to try it out yet.




Fat Johnny's B@stardized Piedmont Sauce

(an outstanding recipe by professional chef "Chez" John Eddy of Topeka, KS.
Somewhat similar to Blues Hog Tennessee Red in some ways)

1 quart cider vinegar
12 oz Sweet Baby Ray's BBQ Sauce
1/3 cup packed brown sugar
1 T red pepper flakes
2 T salt
1 tsp black pepper
1 tsp celery seed
2 T Worchestershire sauce
Juice of one lemon
1 T chipotle powder
1 tsp dry mustard
1 T onion powder

Bring to the boil, then simmer for 10-15 minutes. Let cool, and bottle.
Great with Carolina style pulled pork BBQ sands.

I went with the mustard ss posted and the fat johnys sauce.Made them last night.Cant wait to use them today  on wings and ribs.That mustard sauce tastes just like one I had when I was working down south.Thanks for the help!

Mez, The Carolina sauces are split between North and South Carolina, Red Vinegar based and Yellow Mustard based. I like 'em both alot! These silly Cal folks don't seem to like either one.You can only go so far with the ultra sweet stuff that most folks like.
