Ham Balls

A friend of ours gave us this recipe.  We followed the recipe this time, and cooked them accordingly.  Next time, however, we are going to put them in the smoker.  We plan to serve them as appetizers for Easter dinner.  Here is the recipe:

1 1/2 lbs ground ham
1 lb ground beef
2 eggs
2 C crushed graham crackers
1 C milk

Mix all ingredients together.  Mold into balls and bake in  9 x 13 pan at 350 degrees for 1 and 3/4 hours.

Make sauce:
2 t dry mustard
1 C brown sugar
1 1/2 C tomato soup
3/4 C vinegar

Mix mustard and brown sugar together and add vinegar and tomato soup.  Bring to a boil.  Baste ham balls 2-3 times while baking.

We would suggest making twice as much sauce.  You will want extra to cover them (to put in a crock pot or chafing dish to keep them warm) after they have cooked.

Nothing wrong with them. But where did you find un-neutered hams at?

The Amish in PA have whats called ham loaf. Ground ham, salt, pepper, small amount of bread crumbs, egg and pineapple juice. Placed in a loaf pan and baked.e

10.5, GOOD ONE!!!!  I almost used "Nice Balls" for the title, and then for my opening line I was going to say "Now that I have your attention...", but I chickened out - this is Mrs. talking.   ::)

Nepas, we have also made ham loaf, and it is good stuff too!  I forget that where you live you have easy access to all that yummy Amish cooking.  We have Amish here in Iowa, but not to the extent of Pennsylvania or Ohio.  Have you ever had pickled ham?  I love it!

I think when we make these again, we will kick up the sauce a notch.  Add a little cayenne and a lot of garlic.....not until after Easter, though, as I don't think my nephews would like kicked up sauce that much...

Thanks, HCT!

SS, we bought a bone-in cured ham.  It was not a fresh ham. 
We ground the meat ourselves.
We thought about getting ground ham at Fareway, but someone warned us that their ground ham was actually pre-seasoned for a ham loaf.
Whether or not it was, we can't say.  We just went ahead and bought a ham and ground our own.

Rule #1 - Never go shopping hungry.

That being said, the 6lb. Cook's ham found it's way into my cart.
The beef is in the freezer ready to be thawed and ground.
