Making your own Kielbasa? Favorite receipe? I'm down to my last vacuum frozen pack and need to make some more.

Sparks-

I basically use the Rytek Kutas recipe with minor changes...

double or triple the garlic (fresh only!)
double the majoram
50% more freshly ground coarse black pepper
additional 1/4 cup+ water (a hint from Mr Reetz- sausage maker > 60 yrs)

Don't forget the red pepper (beer sausage recipe). I use 2 tsp to 10 LBS. (lower heat variety from sausagemaker.com)

** Before my meat/fish supplier burned down, he sold me 50 LBS pork shoulder @ $1 per pound! (and 24 lbs Salmon fillets @ $3/LB). I just made 15 lbs kielbasa... unhung them this AM and the dog won''t leave me alone!

I HIGHLY recommend steaming the sausage in beer. WOW!!!

I am wondering if anybody has had any luck finding one of these themostats in Canada ... by the time you buy one for $150, pay the exchange and the shipping and who knows if there are any duties or brokerage fees, you can almost buy another smoker!  Anybody had any luck?

 Try this link for Ebay Canada. They have the same contoller that I bought. You will have to add a relay and do some wiring.
