2 x Splatchcock chickens & Veg

Well what to do on a long weekend down here in New Zealand ???
Put the Bradley to work what else LOL.... :D :D :D



Went down to the supermarket and got two chickens and some veg  Carrot,Parsnip,potatoes & Kumara (sweet Potatoe)





OK time to prep everything spray the racks with oil.Splatchcock the chickens I also sprayed the chickens with oil so that the Portuguese Chicken seasoning would stick
The other one was coated with Red Wine & Garlic Marinade
With the Vegetables I put them in the Microwave for 15 to Min to half cook them with a bit of garlic and herb salt and a splash of the Honey Maple syrup

All ready to go to the smoker

The chicken was moist and the veges had a nice Smokey flavor through them.
Next time when I do veges I will smoke them then roast them in the oven as the outside was a bit chewy but still good though

How did the skin on them birds turn out for ya?

I was quite surprised the skin was not to bad rather nasty
The only one who did not like it was one of the kids, loved the meat but not the skin
The way I look at it is as long as the meat is nice and cooked to my liking i think that's where the money lies LOL

If you finish on the grill or TBE or SRG you will get crispy skin.

I like to smoke/cook till the IT is about 140 F the finish over high heat and pull outta the heat when the IT hits 160 F allow to rest 5 min and the temp will rise to 165 F.

moist, juicy and crisp skin.

Heck !!! I would even go down to the Kawarau Bridge and bungie jump for some of that.. :D :D

Thanks I will have to give that a go next time I do a chicken and that wont be to far away LOL....

After the smoke cook that bird just like you would any other bird on the grill.

I got TBE 2 years ago and havent used my grill much sence then.
